This is a bread lame, pronounced ‘Lahm’, a French word meaning ‘blade’. You use a bread lame to score or cut the dough before placing it in the oven. Scoring the dough helps the bread expand evenly in the oven.
The lame comes with 5 razor blades. The two pieces of wood can be twisted (or use a small Allen key) to come apart, where you can place the blade inside the disc. You then carefully screw the pieces back together, to hold the blade in place. Follow the same process to replace the blade, and to store the blade inside when not in use.
Candice personally stores hers in a container for safety, with the blade still in the out position. This is for safety, speed and convenience, so it is ready when needed.
